In tune with the season, Transitioners gathered last Sunday (10/28) for the second annual Transition Winter Squash party. Folks brought different kinds of winter squash and all “squashed” into the Barbara Weinstein’s kitchen to cook, share recipes, and visit. Creations included butternut squash stews, tender delicata squash rings, rice-stuffed squash, spaghetti squash marinara, and some mini-Japanese Kabocha squash from Cathy Berwaldt’s garden. And even some zuccini spread with Oaxacan cheese so the summer varieties didn’t feel left out.
